Special Side Dish: Sandy Potatoes

As promised, this week I’ll show you a different recipe for a side dish… Everybody loves potatoes, french fries, baked, smashed potatoes… potatoes are perfect with every dish! Today I’ll tell you about a different way to cook potatoes, and I assure the taste is great!

Whenever you don’t have enough time for cooking baked potatoes, but you don’t want giving up to potatoes, you can cook this easy and quick recipe and that’s it!

Sandy potatoes are perfect, as I said, because of the fast and easy preparation, but they are also a good way to use old bread. All that you need is potatoes, old bread and some spices!

Let’s see how I made them!

Sandy Potatoes

The preparation of this recipe is, in some way, something between baked potatoes and boiled potatoes… Patate Sabbiate 4As I said because of they are easy and fast to prepare, they are the perfect last minute side dish. Because of their particular solidity sandy potatoes are perfect with meat and also with fish dishes.

Ingredients for Sandy Potatoes for 4 people:

  • 1 Kg of potatoes;
  • 100 gr of old bread;
  • 50 gr of parmesan cheese (it is optional but I suggest it);
  • Extravirgin olive oil;
  • Salt;
  • Pepper;
  • Spices (the ones you prefer, for example I use Oregano, rosemary and sage when the sandy potatoes are the side dish for the meat, and thyme for the fish).

Useful tools:

  • Big pot;
  • Terrine;
  • Baking tray;
  • Baking paper;
  • Mixer for grind the bread and the spices.

Procedure:

At the beginning I put some water in the pot and I boiled it. I used whole potatoes and for this reason it is important to choose potatoes Patate Sabbiate Preparazione 1with the same dimension, but you can also decide to use peeled cube of potatoes. When the water boiled I put the potatoes and i cook in  the water for 10/15 minutes (if you use little potatoes’s cubes 5/7 minutes are enough). In the meantime I put my old bread in the mixer and i grinded it not too small. And after that i grind the spices. When my potatoes were cooked (I tested the solidity with a fork), removed the water and I peeled the potatoes and I made my cubes. After that I put the cubes in a terrine and I added the grinded bread, the spices, the parmesan cheese and salt and pepper and a little bit of oil. I blended all with a spatula or with my hands until every ingredient is well mixed together.Patate Sabbiate preparazione 2

The preparation is ended! The last thing to do is to put the potatoes in the baking tray with some baking paper and add some olive oil. I put the tray on the oven at 200 Celsius degrees (about 400 Fahrenheit degrees) for 10/15 minute or until the crust is well gold.

There are several variations of this recipe, in some of them the potatoes are cooked only in the oven, in some other recipes the potatoes are cooked in a frying pan… In my opinion this way is the best because if you boiled in advance the potatoes, the spices and the cheese melt to the potatoes way better..

At last, if you want more taste potatoes you can add to them some tiny pieces of smoked bacon.

Personally I think that this way to cook the potatoes is one of the best! With sandy potatoes I solve the problem of the side dishes when I have few minutes to prepare it. This recipe solve another important problem for me… Every time I prepared baked potatoes it is a mess: some of my guests love the potatoes well cooked, some other guests prefer the potatoes less cooked, some guests love potatoes without oil and at last other guests love more oil on their potatoes… I don’t know if you have the same problem… but I definitely solve it with sandy potatoes!
