Strawberries rolls

Hello Friends!

Today I’ll propose you a sweet finger food… it is really easy to do, really light but absolutely awesome! One of my favorite things of summer season is the fruit and all the variety of fruits that you can find now! For the today’s recipe I chose strawberries and berry for decorate, but you can easily use any kind of seasonal fruits like cherries, peaches, pineapples and also papaya and passion fruit! I tried the recipe with pineapple peach and cherries, and it was incredible good with each of these fruits!

If you are looking for something light, without butter, milk, gluten and poor in fats, this recipe fits great!

Let’s see how I made my Strawberries Rolls

Time to prepare 5 minutes – time to cook 15 minutes

Ingredients for 8/10 rolls (as you can see in the pics I used only half doses because I prepared only 4rolls)

For the external part of the rolls:

  • 4 eggs;
  • 125 gr sugar;
  • 50 gr corn starch;
  • a teaspoon of vanilla extract;
  • olive oil.

For the internal part of the rolls:Ingredients

  • 300 gr of strawberries (or other fresh fruit);
  • 3 tablespoons of sugar.

Useful tools:

  • terrinas;
  • frying pan;
  • whisk;
  • spoons;
  • toothpicks.

Procedure:

At the beginning I washed my strawberries and I cut them in little cubes. I put the cubes in a terrina and I added 3Strawberry Roll preparation 1 tablespoons of sugar. I mixed the ingredient and I left it in the fridge for 30 minutes.

In the meanwhile, in a terrina I put the eggs, the sugar and the vanilla extract and I mixed with a whisk for almost 10 minutes, until the mixture was homogeneous and without clumps. At that point I added little by little the corn starch and I mixed gently from the bottom to the top.

I put some oil in the pan and when it was hot, I put one or two tablespoon of mixture inside and I cooked both side. I obtained almost 10 discs of almost 10 cm of diameter. I repeated this step until I finished the mixture.

I put a tablespoon of strawberry cubes on the top of each disc and I closed the rolls with a toothpick.

For having perfect round discs you should use a tiny pan. I had not so my discs are not perfect, but it was not a big deal.

As I said I had not a proper tiny pan for having perfect discs, in addition the pics are of my very first time in trying the recipe! These are the reason why my result was not really beautiful to see, but I assure it was really taste!

As I said before, the recipe is super easy and super quick, and due to these is perfect for any occasion: like finger food at the end of a lunch or dinner, like sweet with a coffee or like a snack during the day.
