I’m back with a new sunday recipe! Today’s recipe is a particular rice… although it is not particularly exceptional or rare, it is a kind of special for its presentation!
Today I’m going to show you how make a simple risotto with zucchini and shrimp something different. And I’m going to achieve this goal easily using a different typo of rice and a refined way of presentation. For the first purpose I decide to use the black rice, also called “the Venus Rice”.
Why do I use the black rice?
Long story short: because of its color! I could say that I choose this rice because it is particularly healthy, and it has a lot of benefits for the people… but it is not the truth! The truth is that I use it it because it is black! Actually I saw in the store also red rice… and I’m excited to try also these kind of rice!
Let’s see what I’ve done!
Time to prepare 15 minutes – Time to cook almost 45 minutes (it really depends form the typo of rice you’ll choose)T
Ingredients for 4 people
- 250 gr of black rice (Venus rice);
- 300 gr shrimps without shells;
- 300 gr di zucchini;
- extra virgin olive oil;
- Garlic;
- Salt and pepper.
Useful tools
- A grater with big holes;
- A big pot for the rice;
- Frying pan and terrines.
Procedure:
The first thing I did was take care of the rice, because it need a lot of time for cooking. I put some salt water in the pot and when it was boiling I added the rice. Let it cook for almost 40/45 minutes. In the meantime I put in the frying pan some olive oil and a piece of garlic and I let them cook until the garlic was gold. During this time I grated the zucchinis using the grater and I put them in the frying pan with the gold garlic and the oil and I cooked for about 5 minutes. I removed the garlic and I put the cooked zucchinis in a terrina.
I put my shrimps in a different terrina and I added some oil. I mixed them together and i put them in a clean frying pan. I cooked the srimps until they are well colored. At this point I turn of the fire and in the same frying pan I added the zucchinis. When the rice was ready I removed the water and I added the rice in the frying pan with the other ingredients. I mixed them all for a perfect mixture.
When all the ingredients were well mixed together I served my risotto.
For that time I decided to realized a kind of savoury pie with my rice easily using an inox ring (the same I used for cut my biscuits). I filled the ring with the rice and I pushed it with a spoon. At the and I added some shrimps n the top and I gently removed the ring. Et voilá the savoury pie was ready!
I love this way of presentation and I use it especially in my formal dinner when I want to play with the colours of the food without preparing any hard to make recipe!
I use the savoury pie made with rice for main course and for appetizer as well.
For making the appetizer I simply use smaller ring and I create some finger food with the rice and with vegetables as well.
For making a special main course you can use the ring for making savoury pies but if you use rices with differnt colors (black rice, Brown rice, red rice and, of course, white rice) you result will be awesome!
