Here we are with the usual sunday’s easy recipe. I really love the vegetable or meat pie and I love to cook hem as well. Actually I use to cook this kind of pie like appetizer and everyone loves them. Compare to all my other personal recipes for salted pie, the one I’m going to show you today is the best one … I don’t know why but everybody loves this quiche…I think it’s probably depends from the particular taste that the bacon gives to the quiche…
But let’s see how I prepare my vegetables quiche with bacon.
Ingredients for a pie with a diameter of cm.
Time to prepare 20/30 minutes – time to cook almost one hour
- Pie base pastry or puff pastry;
- 200 gr of bacon in cubes;
- 1 carrot;
- 1 eggplant;
- 1 zucchini;
- Half red pepper;
- Half yellow pepper;
- 1 shallot;
- 1 leek;
- 3 egs;
- 100 gr grated parmigiano;
- 200 ml whipping cream;
- 40 gr of butter;
- Extra Virgin Olive iol;
- Salt and pepper.

- Frying pans;
- Cutting board:
- Knife and spoons;
- Whip
- Oven pan
Procedure
As usual the first thing I did was to turn on the oven at 180 celsius degrees (almost 350 fahrenheit degrees). After that I washed carefully all the vegetables, and I cut them starting from the shallot. I cut all the others vegetables except the leek. I put some olive oil in the frying pan with the shallot and when it was gold I added all the cutted vegetable. I cooked everything for minutes. I added salt and pepper.
In the meantime, I put the butter in different frying pan, I cut the leek and I put it on the frying pan with the melted butter. I let them cook for 5 minutes and after that time I added the cubes of bacon. I cooked everything for additional 5 minutes.
In a terrina I joined the whipping cream, the eggs and the cheese and I mixed the ingredients together with a whip. WHen the ingredients are well mixed I added the cooked vegetables and the bacon and leek ad I mixed again.
I put all the ingredient inside the pie base pastry and I put it in the hot oven for almost one hour at 180 Celsius degrees (about 350 fahrenheit degrees).
When the pie was ready I took it out the oven and I let it cool down.
The quiche must be served warm.
As you can see the recipe is super easy! But I can assure that the taste will be amazing!
